SOMMELIER'S CORNERAdolphus Foo Foo’s interest as Sommelier began early in his career at the fine dining restaurants in Malaysia and Singapore. His naturally curious nature drove his quest to discover the mysteries and tales of grape growing and wine making. His natural appreciation for foods was a perfect match. Combined with a love of geography, history and cooking, he was off on a life-changing path. Foo won the role as Resident Sommelier for MGM MACAU in November 2007. In his time here, he has grown the coveted MGM Wine List to more than 1200 items and he takes charge of all aspects of the wine program. He supports daily operations in managing wine list, restaurant service and education. Nonetheless, he also promotes the same passion for wine to the restaurant service staff. He is never stingy to share his knowledge with his subordinates and guests. At leisure, wine is also the focus of his life. By attending multiple tastings and conventions throughout Asia, he stays on top of trends and directions of the wine world. Foo loves competition. He believes it is the ultimate way to keep him on track. He has received accolades as winner of the Australian Wine Competition and a Finalist of Sopexa Sommelier Grand Prix, and these eventually won him a scholarship in the well known wine association, SHATEC in Singapore. Foo currently holds a Certified Sommelier from Master Court Sommelier (UK), Certified Specialist of Wine from Society of Wine Educators (USA) and Advance Wine and Spirit Education Trust with Distinction and occupies the post as Vice President of Society of Wine Educators Hong Kong and Macau.
